Recipe: Sweet Potato Pancakes

Sweet Potato Pancakes Recipe

1 cup sweet potato (mashed)

3 eggs
Cinnamon (to taste)
1 tbsp coconut oil
Maple syrup (to taste)

1. Cook and mash sweet potato
2. Beat eggs into sweet potato
3. Add cinnamon and/or desired spices
4. Add coconut oil to frying pan
5. Set stovetop heat to just-below medium
6. Scoop 1/4 cup of batter onto frying pan
7. After 30 seconds, flip the cake
8. After 30 more seconds, flip the cake again, then immediately flip it again so it is back on the same side it was on after step 7. This will cool the hot side of the cake enough so that it doesn’t burn
9. Let cook for 30 more seconds
10. Remove from pan
11. Once you have a stack of sweet potato goodness piled up on your plate, drizzle maple syrup over it

A quick note on the sweet potato: In the video for this recipe, I peeled the sweet potatoes. More recently, I have been buying organic, and then leaving the skins on the sweet potatoes. I find having the skin in their gives it a little more structure, plus it is nutritious.
